Austin Dillion with Andy Santerre Motorsports Secures Sponsor for 2008 (Con't)

The announcement and car unveiling were made at the SEMA show. The 2008 Busch East Series will consist of 14 races at 13 different tracks, from Iowa to New Hampshire and an all star event in California.

Dillon, the Clemmons, NC, native is competing in a number of late model dirt track racing series, including the Fastrak Racing Series Dirt Late Model division, the World of Outlaws 360 OTC Late Model Series, and the O'Reilly Southern All Star Racing Series. He earned his first feature victory May 25 in the Fastrak Racing Series Dirt Late Model division at the Dirt Track at Lowe's Motor Speedway in Concord, NC.

"I'm really looking forward to running the Busch East Series next year for Garage Equipment Supply and Andy Santerre Motorsports," said Dillon. "Everyone at GES has been great to work with and Andy's success in the series speaks for itself. My racing career has happened very fast but I'm ready for the challenge in front of me."

Andy Santerre is a four-time NASCAR Busch East Series Champion (2002-2005) and the 1998 NASCAR Busch Series Rookie of the Year. The Maine native retired after 2005 to focus his efforts on the team ownership of ASM, which has resulted in seven wins over the past two seasons.

"I'm really excited to have Austin Dillon driving for ASM," said Santerre. "After watching him race his dirt Late Model, I have no doubt he has talent and know he will acclimate well to the Busch East Series cars and racing.

Spicy Eggplant Dip

Team JEGS chef Nicky Morse has prepared meals for royalty, distinguished diplomats, and Ohio's ultra wealthy at the only four-star restaurant in Columbus, Ohio. He's cooked for country music's brightest stars as part of the support crew for CMT's "Showcase" program. He's mentored young apprentices at Ohio State University, and worked elbow-to-elbow with Wolfgang Puck to raise money for cancer research.

Now motorsport's most decorated chef will be opening his personal cookbook to race fans and members of the media by featuring one of his own creations each week of the 2007 NHRA POWERade Drag Racing Series. Complete with step-by-step instructions, Morse will divulge a complete recipe on teamjegs.com and NHRA.com that will allow budding cooks a chance to create a masterpiece of their own at home.

I love trying new things to eat and make. Spicy Eggplant Dip is just one of the many things that have come from different experiences I have had. I think this will be a favorite!

Spicy Eggplant Dip (This recipe makes approximately 3 quarts.)

When I was in my mid twenties I ended up in Syria for a couple weeks. (Why?) I was traveling through Europe with a friend who recommended that we go to the Middle East. I was really into creating and learning new recipes. The only way that we could get to Syria was with a one way ticket. I thought that it would be worth it because I was really going to experience some new tastes. (FYI- Don't go to Syria with a one way ticket. It is not healthy for your parents.) I had been in Italy and Greece right before going to Syria. I was eating lots of eggplant. Eggplant is not the easiest vegetable to make taste great. Anyway, I combined the data I collected and created this recipe that happens to be one of my favorite eggplant recipes. I use it as a dip at parties. It's a real hit. It can also be used as a layer in lasagna. I've even battered shrimp for deep frying (If you batter shrimp. I normally add a few eggs to the recipe. Evenly wrap the mix around the shrimp, and roll the shrimp in 50/50 breadcrumbs and parmesan cheese. Chill before deep frying.)

Ingredients:

4 Each Eggplant (medium to large)
Roast the eggplant whole in the oven at 350 degrees Fahrenheit until they are soft. This will take about 2 hours. Scoop the inside out of the eggplant and chill. (Discard the skin and stem)
6 Ounce Jar Sun-Dried Tomatoes packed in olive oil. Drain the tomatoes and reserve the oil. Chop the tomatoes, reserve.
1 Each Large Red Onion (Fine diced)
6 Each Large Garlic Cloves (Minced)
2 Teaspoons Red Pepper Flakes (Hot)
3 Each Large Red Tomatoes (Skinned and Seeded)\(Small Diced)
3 Each Large Red Bell Peppers (Fire Roasted/ Skinned/ Seeded) (Small Diced)
1 3/4 Cups Locatelli (Grated) 1.5 cups for the mix/ .25 cup to sprinkle on the top
1 Tablespoon Pure Tomato Powder (I get mine at The Spice Shop in Chicago)
1/3 Cup Sweet Basil (Fresh/ Chiffonade)
2 Teaspoons Black Pepper (Fresh ground Telicherry)
8 Ounces Provolone (Small diced)
˝ cup Chives (Fresh/ Sliced Thin)
1 Tablespoon Olive Oil (Extra Virgin)

Procedure: -In a 350 degrees Fahrenheit skillet, lightly brown the onion in the sun-dried tomato oil. Add the garlic and heat until garlic is light brown; add the pepper flakes and fresh tomatoes. Cook, continually stirring, until the mixture is almost dry. Remove from the heat, Chill
-Place all of the ingredients in the mixer, except for the .25 cup of Locatelli and olive oil. Using the paddle attachment, mix the ingredients until well mixed.
-Brush the inside of a baking dish with the olive oil. Add the spicy eggplant mix.
-Bake at 350 degrees Fahrenheit until hot. Sprinkle with remaining Locatelli.
-Enjoy!

Note: I like to serve this dip with warm pita chips. Simply cut pita bread into triangles. Brush the triangles with extra virgin olive oil, sprinkle with salt and fresh ground black pepper. Bake the pita triangles in a 350 degree Fahrenheit oven until crisp.

Sprint Car Win: Jones & Dollansky

USAR's Northern Division title goes to JEGS/Speedco pro St. Amant

Two-time ASA champion Gary St. Amant took a big step towards his first USAR Hooter's Pro Cup series title by clinching the Sears Auto Center Northern Division title with a third-place finish Saturday night in the Miller Lite 250 at South Boston Speedway.

St. Amant, who has led the Northern Division points since the second race of the year, pockets $20,000 for winning the division and will carry a 25-point bonus into the five-race Championship Series.

"We're absolutely thrilled and relieved to get this done," St. Amant said. "To hold off Benny Gordon, one of the best short-track racers in the country, down the stretch of the regular season was a real test. That guy is awesome and I can tell you he didn't win three Northern Division titles by accident. He's a racecar driver."

St. Amant needed to finish in eighth place or higher to secure the Northern Division title. The only racer capable of catching and passing him in the points was Gordon, who ended this race in second place.

"I might have made a run at winning this race but I saw Benny right in front of me and I just decided to follow him in," the 44-year-old St. Amant said. "There was no point tempting fate. I just got on his bumper.

"To make it through the entire regular season with hardly a scratch on this No. 7 JEGS.com/Speedco Monte Carlo makes me feel very fortunate. We've had a bunch of top-five finishes and even got a win in there so it's been almost a perfect season. I really feel like we just need to keep doing what we're doing heading into the Championship Series."

The best of the North and South will begin the five-race sprint to the USAR title Sept. 1 at Mansfield Motorsports Speedway in St. Amant's home state of Ohio. St. Amant hails from Delaware, Ohio.

"It's a thrill and an honor to present my great friends at JEGS and Speedco with this Northern Division title but the real goal in the championship," St. Amant said. "The season is already a big success but we've still got some racing left to do and I can't wait to get started. We're going to enjoy the next few days and then it's back to work."
